Makguksu, prepared from buckwheat, is a traditional local dish that should not be missed when visiting Gangneung. The "mak" in makguksu means "quickly made by pulling the noodles," wich reflects the convenience and popularity of makguksu. Makguksu is prepared by removing the husk of the buckwheat and mixing the buckwheat flour with water to make noodles. It is mixed with wheat flour and starch because it lacks the texture and elasticity of wheat flour noodles. Makguksu is popular due to its chewy texture that easily breaks off and its cold, savory flavor.

The nation’s top five jjamppong restaurants originated from a blog post by an individual. One of them can be found in Gangneung. It's filled with delicious and spicy soup made from a variety of seafood, including squid, clams, and mussels, as well as pork, mushrooms, and other veggies. The broth is topped with copious amounts of sliced mussels, making it enjoyable to consume. Jangkalguksu (Spicy chopped noodles)

Jangkalguksu is a dish that uses gochujang (red chilli paste) and doenjang (fermented soybean paste) to give traditional Kalguksu a spicy taste. In the past, it was not easy to obtain salt in rural areas of Gangwon Province. As a result, Kalguksu made with wheat flour dough was served with anchovy or kelp broth seasoned with soy sauce. In particular, the practice of boiling Kalguksu with spicy seasonings such as doenjang or gochujang instead of salt or soy sauce was passed down in rural communities and Jangkalguksu was created based on this tradition.
